Should you be attempting to garnish an item which has already dried (chocolate ganache)
or is quite dry inherently (sugar cookies), try very lightly moistening the food
surface. A perfect solution is to spray a small amount of Evian water from a canister
over the items. The mist filters down and leaves just enough moisture on your items
to insure they adhere. A very interesting application is also using both the silver
and gold together to sprinkle on a dish. It is beautiful on basmati rice and desserts.
Gold will not lose its shine up to 325º and can be frozen!
